How Do You Make Beer Without the Alcohol?
Brewers can limit alcohol during fermentation or remove it afterwards. The method helps explain why alcohol-free beers taste so different.

Taking alcohol out of beer is only half the job. Keeping something worth drinking in the glass is where the interesting engineering begins.
Non-alcoholic beer can be made by limiting how much alcohol fermentation produces or by removing alcohol from beer after fermentation. Those approaches create different challenges: the first has to build flavour without the usual fermentation journey; the second has to preserve flavour while taking something away.
That helps explain why two cans carrying similar front labels can taste remarkably different. One may be crisp and familiar, another sweet and cereal-like, another strongly aromatic. The label describes an alcohol level more readily than it describes the route the brewer took to reach it.
Understanding that route makes the drinks aisle more interesting. It also provides a better starting point than the assumption that a low-alcohol beer is simply ordinary beer watered down.
The problem begins before anything is removed
Beer is a designed balance. The brewer is working with the character of the grain, fermentation, bitterness, aroma, carbonation and the final strength of the drink. Changing one part changes the context in which you experience the others.
Imagine a piece of music with one instrument muted. The remaining instruments have not necessarily changed, but the arrangement has. An alcohol-free recipe faces a similar compositional problem: removing or avoiding alcohol does not automatically leave a finished drink that feels complete.
This is why judging the entire category from one disappointing bottle is unhelpful. You may dislike a particular recipe or production approach. That says little about every other way of reaching a similar alcohol level.
There are also two questions worth keeping separate. How was this made? And do I enjoy drinking it? Technical sophistication does not guarantee your favourite pint, while a straightforward process can produce exactly the drink you want.
Route one: make less alcohol in the first place
One approach is to choose fermentation conditions and ingredients that restrict alcohol production. A particularly clear example is specialist yeast that cannot consume some of the sugars available in the brewing liquid.
Fermentis sells SafBrew LA-01 for low- and no-alcohol brewing. The manufacturer says this yeast does not assimilate maltose or maltotriose, while it can use simpler sugars including glucose, fructose and sucrose. That gives brewers a way to limit alcohol formation through yeast selection. It is an example of one commercial yeast's behaviour, not a description of every alcohol-free beer.
The important idea is that “fermented” and “full strength” are not synonyms. A brewer can use fermentation without allowing it to follow the same path as a conventional recipe.
From the drinker's perspective, the interesting question is what remains in balance. Does the beer taste pleasantly malty, or sweeter than you wanted? Does the bitterness feel integrated? Is the aroma appealing when the drink warms slightly? The production method helps explain the design problem, but the glass supplies the answer about preference.
A restricted-fermentation beer is therefore not inherently unfinished. It should be judged as a recipe designed for its intended endpoint, rather than as a conventional beer that failed to reach a higher strength.
Route two: brew first, then remove alcohol
Another approach starts with fermentation and subsequently reduces the alcohol content. Heineken describes using vacuum distillation for Heineken 0.0, followed by blending with natural flavourings. Its published product explanation gives a specific example of alcohol removal combined with work on the final taste.
That final blending step matters to the consumer's mental picture. The aim is not necessarily to run a standard lager through a machine and package whatever comes out unchanged. The finished drink is its own formulated product.
Nor should the word “distillation” lead you to imagine a saucepan of beer boiling vigorously on a kitchen hob. An industrial process operating under vacuum is different from that picture. The company's account establishes the method it uses; it does not make every dealcoholised beer identical to its product.
Removing a component from an already developed drink presents a different design brief from preventing much of that component from forming. It gives brewers another route, with different equipment and decisions along the way.
There are further variations within commercial production. This article focuses on two documented routes rather than treating a short list as an exhaustive inventory of every brewery's technology.
Why the method does not give you a complete taste prediction
It is tempting to create a simple ranking: one process is authentic, another is industrial; one keeps flavour, another loses it. That shortcut asks the production label to do too much.
A recipe still matters. So do the decisions made before and after the alcohol level is established. Two brewers using the same broad route can aim at different styles, sweetness levels and aromatic profiles.
A useful comparison is how decaf coffee is made. Removing a familiar component creates technical challenges, but the process name is only part of the story of the finished cup. The raw material, subsequent handling and your own taste remain relevant.
For beer, a better approach is to describe what you actually experience. “This is too sweet for me” is more useful than “this tastes alcohol-free”. “The bitterness overwhelms the body” tells you something you can look for in the next purchase. A vague category verdict closes the investigation too early.
Alcohol-free, low-alcohol and 0.0 are not interchangeable clues
Read the numerical alcohol declaration as well as the name. Descriptive terms depend on the market and the rules or guidance being applied. A product's marketing language is not a substitute for the information on its own label.
The UK's 2018 low-alcohol descriptor guidance recommends “low alcohol” for drinks at 1.2% ABV or below, “de-alcoholised” for extracted-alcohol products at 0.5% or below, and “alcohol free” for extracted-alcohol products at 0.05% or below. These are the recommendations in that dated guidance, not a universal international definition.
A subsequent England consultation on updating the guidance is a separate document. A consultation proposal should not be read as proof that a new rule has taken effect.
If avoiding alcohol to a particular threshold matters to you, check the exact product and the manufacturer's specification. Do not infer it solely from a shelf heading, an unfamiliar imported label or the fact that another product from the same brand meets your requirements.
The same caution applies when a venue describes its entire selection as “no and low”. That is a useful menu category, but it contains drinks with different specifications.
Less alcohol does not mean no calories
Alcohol content and nutritional content answer different questions. A drink can contain very little alcohol and still supply energy from other components.
For a concrete product example, Heineken's global 0.0 page lists 21 kilocalories per 100ml and 69 kilocalories per 330ml bottle, alongside carbohydrate and sugar information. Those are the manufacturer's figures for that product; they are not a category average or a claim about every market's formulation.
The useful habit is to read the nutrition table for the serving you will actually drink. A per-100ml figure makes products comparable, while a per-can figure tells you about your portion. Both can be informative, provided you do not compare one product's entire bottle with another's much smaller reference quantity.
Nor does a low number automatically make a drink the best choice for your needs. Taste, ingredients, portion size and your reason for choosing it remain separate questions. This is a food-production explainer, not a recommendation to use a particular beer for a medical purpose.
Why the price can feel surprising
A common reaction is that removing alcohol should remove much of the price. That treats the missing ingredient as if it were the entire product.
A brewer still needs to produce, package and distribute the drink. In an alcohol-removal process, the removal itself is an additional production stage. In a different approach, recipe development and specialist inputs may be part of the work. None of this tells us the exact cost structure of a particular can without company data.
It also does not prove that every price is good value. The practical comparison is the amount you pay for a drink you want, in the setting where you want it. A supermarket multipack, a restaurant bottle and a draught pint include different retail experiences.
If your objection is specifically to paying the same price for a smaller serving, compare volume as well as the headline price. If the question is whether it is worth choosing over a soft drink, that depends on which experience you are buying: bitterness, a familiar beer format, food pairing or simply something you enjoy.
A useful way to compare three beers
Choose a small set with a purpose. For example, compare three lagers rather than mixing a lager, a stout and a heavily hopped pale ale and attributing every difference to alcohol-removal technology.
Serve each according to its instructions and use clean glasses. Keep a note of the actual ABV, serving size and method if the brewer discloses it. Missing process information is worth recording as missing; it is not an invitation to guess from the taste.
Then use a few ordinary questions:

A different drink can still fill a familiar role
The wider shift towards new approaches to sobriety and socialising creates space for drinks that do not have to apologise for their alcohol content. They can be chosen because they fit an evening, rather than because they imitate every aspect of a stronger version.
That is a useful way to approach the category. Expect a beer designed to work at its stated strength. Ask the label to tell you what is in the bottle, ask the brewer to explain the method where possible, and ask your own glass whether you want another.
The engineering is interesting because it creates more possibilities. The successful result is much simpler: a drink you are pleased to have ordered.
